This vegan kimchi is a carefully crafted fusion of classic Korean components and organic fermentation methods. Our authentic recipe, hailing from my father's hometown of Gaeseong, North Korea, showcases a diverse blend of over 150 kimchi variations found throughout the region. Each area boasts its own unique flavour, with the northern regions favouring a lighter, more watery rendition. This is the taste I grew up with and is reflected in our products. Additionally, I have incorporated a special mixture of kelp and shiitake seasoning to enhance the umami instead of using fish sauce.
